THE LEMON TREE
More than 50 years ago, JOY co-founder Michael Diamandis’ family immigrated to Australia. When they settled into their new home in the Blackburn suburbs, Michael’s father planted a lemon tree in the backyard.
Why a lemon tree? It was once a common custom for immigrants to plant lemon trees on their new land. Lemons are a staple ingredient used in many cuisines, so it made sense to grow their own supply. It is a tradition Michael continues to this day.
50 years on, the lemon tree continues to flourish in the very same spot. This tree was one of the inspirations behind Joy’s inception. In fact, its fruits are still used in the Joy kitchen. Its bright, plump lemons produce a zesty juice and rind that is the secret behind Joy’s lemon meringue cupcake and JOYmade lemon curd in a jar.
